Waffle Time!

This morning I slept in really late (10:30) and when I woke up, the first thought that came to my mind was, “waffles.”


I called Tony into the bedroom and asked him if he wanted waffles and then got up and made some bad-ass waffles.

Light’s Out!

The lightbulb in our fridge went out this morning. It makes it THAT much harder to root around for snackage when it’s dark in there.

I opened the fridge to grab the coconut milk for my coffee (5:45 am), closed the fridge, used said milk, turned back to fridge, light was out. WHAT?!

I guess we’re going to have to learn a lesson in what kind of bulb a fridge uses. This has never happened in all my years. This fridge is also only almost 2 years old. Crazy.

If you’re a reader of other blogs, and I’m betting you are, you’ve noticed the little “What I Ate Wednesday” trend. There’s a few other trend-type posts that I would like to try out as well, but this is the only one I’ve managed to do!

So, without further ado, my Wednesday eats!

Breakfast of Champions

Nothing is more pathetic than the way I hobble myself around when my knee is acting up, and it has been downright rude lately. Suffice to say, I’m super pathetic at the moment.

Worse yet? It takes me much longer to hobble places than it does to walk. So when I went to run errands and parked equally between 3 of the stores I need to go to, crossing that ridiculously hot pavement became suddenly more treacherous.

I ran those errands about 4 hours ago and I’m still trying to stop sweating. Those cats better be thankful for what I went through to get them more treats.

Los Angeles has yet to cool down from this dumb heatwave. I mean, it’s still hovering somewhere between 98-100 which I GUESS is cooler than has been. In reality, after the temperatures surpass 98, it’s all a blur to me.

When we woke up (really late) this morning, it was already 81 degrees in the house. UGH. Then I made breakfast. As I was sweating and sautéing, the temperature climbed. Tony finally turned on the a/c as I was plating this delicious breakfast.

Strawberry Piña Colada!

I know it’s only Thursday, but this week has been exhausting. The worst part of the week has been having to put my gym routine on hold for a while. I went to physical therapy for my knee (yes, the knee I injured more than a year ago) on Monday, and ever since I’ve been in a ton of pain. The gym is certainly out of the question.

Meanwhile, the cats are still on the outs. It’s hard to keep them separated, but I really don’t want a full-tilt cat fight on my hands.

Finally, my nerves have been going crazy, so I haven’t really been eating much, at all. I did make a great dinner the other night, though.

Cauliflower mashed potatoes with almond milk, kale with Bragg’s aminos, and tempeh cooked in a sauce of tomato paste, soy sauce, red wine vinegar, and spices.

Smooth(ie) Operator

I’ve been trying to come up with a protein-packed, fueling, refreshing warm-weather smoothie for breakfast. I’ve mentioned before my obsession with pineapple and coconut and I’ve been very focused on making a pina-colada breakfast smoothie.

I’ve also thrown in strawberries in a few of my experiments and that is delicious!


















I’ve also tried adding tofu to give it a protein boost and keep me full and fueled during my hard-core morning workouts. Unfortunately, I only had regular, extra-firm tofu on hand. That… served the purpose but made my beautiful smoothie taste a little too tofu-ey.
