Door of Opportunity

When I was a little girl, my parents used to make a joke when someone left the car door slightly open.

“When is a door not a door? When it’s ajar!”

It’s so dumb that it still makes me laugh.

Today I find that the door of great opportunity is no longer a door; it’s ajar.

Here comes the weekend!

I guess I just took an unintentional hiatus. There are simply not enough hours in the day to do everything.

Here’s a list of things I’ve been up to:

– Work

– Certification course on plant-based nutrition (I’m so excited about this!)

– Gym

That’s about it. Funny how life sucks the hours away from you.

I can’t even remember last weekend at this point. But that’s ok! Today, I’m headed out to Dallas, TX to visit family and compete in the Jailbreak race! By compete, of course, I mean that I will lose. But I will lose in muddy fun.

I can’t wait to share my pictures with you.

For now, I’m off to LAX!

I Can’t Find the Vegetable Peeler

Something about this week has had me WAY off my game in the kitchen. Both Sunday and Monday consisted of Tony and I hitting the grocery store for food to cook. Tuesday was supposed to be a “chili in the slow cooker” day but when I went to prep it all in the morning, I couldn’t find the vegetable peeler and gave up. We went to Whole Foods for dinner. Last night we ordered vegan delivery.

Lazy? Maybe. Tired? Absolutely. Is it possible to feel worn out by Wednesday of the week? Worn out before the week begins?

That’s Life + Giveaway Winners!!!

Happy Sunday to you all! This weekend has been nice. I like when it turns out to be different than I expected. Saturday went by in a BLUR! After hitting the gym and getting my butt kicked by my new personal trainer (I’ve had two sessions and I’m amazed at the changes I’m already seeing.), Tony and I headed out to my parents house for lunch.

After that, we picked up Tony’s tux for a wedding that he’s a groomsman for. The wedding is this Wednesday and I’m excited to head out there and celebrate with our friends. The beautiful bride is vegan too so I’m excited for some wedding cake!

For a while, Tony and I had been discussing getting new computers for our up coming birthdays. Our birthdays are a day apart so we always do a big thing for both. One year we went on a cruise. So, we decided we might be interested in switching to Macs after always being PC people. We headed over to the Apple store just to take a look and see what the options are. Nearly 2 hours later, we walked out with 2 MacBook Pros. Happy early birthday to me!

On the agenda for today is some MAJOR grocery shopping. We didn’t go last week, I think. Either way, we’re in serious need of groceries. We’re out of quinoa, rice, veggies, and anything else tasty. I need to refresh my smoothie ingredients, since I now have some Sunwarrior protein powder to try out.

Make Me a Movie Star!

Oh wow! Don’t feel like I’ve abandoned or forgotten you, friends! Life, as usual, has been non stop and it has been hard to find time to just breathe.

Lucky for me, I got the day off work today (this job rocks!) so I got to do a little pampering, catch up with an old friend, and actually visit the blog. I’ve missed it so much!

Dinners around here have been really uninspired since I’m still adjusting (or readjusting) to the working world and the lovely schedule that comes with it. My commute home gets me home between 5:45 and 6:15 each night, then I TRY to get to the gym. Dinner for us is usually at 8 or 9 o’clock at night. Not ideal, but what can you do?

The other thing I’m adjusting to? My kitchen just isn’t big enough for me. Clearly, I’m in need of one of those GIANT cooking show kitchens.

Speaking of cooking shows, Tony has mentioned to me that it would a fun idea for me to film a sort-of YouTube cooking show for you guys. Any thoughts? Any special requests if I decide to go down that road? I think it would be a lot of fun and I think you, my awesome readers, would enjoy it as well.
